Tangy, sunny and intensely fragrant, passion fruit is a favourite exotic fruit among ice cream makers, pastry chefs, beverage brands and food manufacturers. Passion fruit in Madagascar
The passion vine (Passiflora edulis) loves heat, light and regular rainfall. Madagascar offers these conditions in several regions, where it is grown by smallholders. Its purple- or yellow-skinned fruits hold a juicy orange pulp dotted with black seeds, with a powerful aroma and lively acidity.
Fragile and quick to spoil, the fresh fruit does not travel well over long distances. Processing it into purée locally and then freezing it is the most reliable way to deliver European manufacturers a stable, consistent product that stays true to the taste of ripe fruit.
From harvest to frozen purée
- Harvest at full ripeness: fruit is collected fully ripe, when sugars and aromas peak;
- Sorting and washing: damaged, mouldy or unripe fruit is removed and the rest is washed;
- Opening and extraction: the pulp is extracted from the shell, then kept with its seeds or sieved;
- Packing: the purée is filled into food-grade containers suited to freezing;
- Freezing: the product is brought down to temperature quickly, then stored and shipped frozen, with no break in the chain.
Non-pasteurised: a choice made for taste
Most purées on the market are pasteurised. Heat treatment stabilises the product, but it also alters its colour and some of its volatile, heat-sensitive aromas. A frozen, non-pasteurised purée keeps a profile closer to fresh fruit: brighter notes, truer colour and intact acidity.
⚠️ The trade-off: absolute rigour
Impeccable hygiene during processing, microbiological testing for every lot and an unbroken cold chain to the end user. The manufacturer, for its part, applies the heat treatment built into its own process (pasteurising an ice cream mix, cooking a jam, etc.) and its HACCP rules.
A great passion fruit purée starts with fruit picked ripe, followed by a cold chain that never breaks.

Logistics: cold comes first
Frozen purée travels in a refrigerated (reefer) container set to sub-zero temperature. Three keys to a successful delivery: a container pre-cooled before loading, continuous temperature logging in transit, and fast customs clearance on arrival.

Move the purée straight into a freezer room. Then thaw it in a refrigerator, never at room temperature, and use it promptly.
Frequently asked questions
Does the purée contain added sugar?
A pure fruit purée does not: you adjust the sugar to your own recipe. Exact specifications are given on the product’s technical data sheet.
Can thawed purée be refrozen?
No. Once thawed, the purée should be used quickly and kept chilled in the meantime, in line with the kitchen’s hygiene rules.
